I’m very much in to my cooking and baking at the moment , i have a big love for food and love getting stuck in in the kitchen! And cooking something that others find delicious is like being awarded a golden sticker in my book!i love making everybody’s bellies full to the brim!!! So yesterday i had the after noon off and so i challenged my self to make a delicious dinner for myself, Sister- Charlotte and my boy friend -George.
I wanted to do something VERY challenging like cook lobster from being ALIVE  …. BUT after my 5k run in the boiling heat, and a bit more thought on having to boil a lobster… I wussed out and decided to take this all in baby steps.
SO rummaged through my cook books , lovely sophie Dahl, Jamie oliver, Nigella lawson and my trust “healthy readers digest”. After searching high and low for the right dish to fit well with the mood of the nice sunny october warm evening ?? ( yes, very confusing) I decided on a recipe from my “healthy readers digest” - Morroccan Chicken and cous cous- with a side salad of Melon and oranges. 
Off i totted to tescos in a very churpy mood and galavanted through the isles as speedy as i could trying to find all the ingredients, i hate shopping for too long, its a very teeny tesco and there was a small man in his mobility scooter that kept reversing in to me. It was a bit of a commotion really.
And i was very disappointed to find that they didn’t have lots of ingredients that i needed for my salad, no olives, no spring onions, NO sesame oil and NO PARMA HAM !!! no parma ham ?! i was in disbelief. 
So basically i grabbed a few bits and bobs and decided that id make up my OWN recipe for the salad and that “it would be better than the one in the cook book anyway”. 
On my way home from tesco i got my bags in a bit of a twist and nearly dropped my milk on the floor BUT i made it home in the nick of time. Put a bit of come dine with me on in the back ground to get me in the cooking mood and then AWAY I WENT!.
I chopped up the chicken, sliced the onions ( had a small onion cry), chopped the garlic and threw it in to a pan , let it cook till golden brown! 
Whilst that was on the job i cracked on to chopping up the courgettes, tossed them in to the pan , along with a can of chickpeas, a can of chopped tomatoes , and some of my own wee tomatos that i chopped up from my left overs the other night!
I realised id forgotton, coriander and a cinnamon stick, but was luckily able to search my cupboards for a quick substitute for them both! (shhhhh don’t tell anyoneeeeee) 
All the ingredients was smelling delicious simmering away in the pan, so i got the cous cous on the go and started to cut the melon. Now this is where it got a bit messy, I have no clue what so ever how to cut a melon, or what is the term for cutting a melon.. dicing a melon? Any how I got the worlds sharpest knife and just started lobbing in to the thing. Then things got a bit out of hand and the knife slipt and i cut my finger!!! It was painful but i powered through, i was more concerned about this obstacle causing distraction to making the perfect dish! I lobbed on a plaster that was about 8 sizes too big and powered through like a soldier!
I invented the salad as i went a long… chopped up some oranges, threw in some wensleydale cheese , cranberries, cucumber and some tropical fruit juice. I wasn’t sure how it was going to taste, but it looked and smelt ever so exotic. 
The Babes had set the table and the dish was ready to be served, i popped some nice fresh yogurt in a bowl and sprinkled it with cinnamon so we could put it on our nice chicken, opened a bottle of wine , and some tropical fruit juice and BON APETITE away we went eating!
I have to say it was YUMMY…. we gobbled it down and even got seconds and i finished off the rest for my lunch today :) . All in all a success, minus the cut finger.
Next time im going to challenge my self to the lobster, OR maybe just a nice roast chicken dinner , i’ve never cooked one of THOSE before ! x
